Best Mango Recipe You Need to Try

Mangoes are certainly the best thing about summer. Perfectly eaten on their own, mangoes taste delicious in  cake, desserts, salads, chicken and what not. I enjoy its fragrance, succulence, sweet & tangy flavour and the fact that the king of all fruits oozes with lots of health benefits. It lowers cholestrol, aides in digestion, protects against heat strokes, and adds a glow to your skin.

In my years of experience as a chef with cruise lines, 5 star hotels and as a food entrepreneur, there is one MAGICAL MANGO dish that has been cherished by all.  It is called the MANGO FLAN. It tastes Divine. Easy to make, if you follow the following recipe, you’ll savour every morsel of it.


5 Eggs
400 ml Milk
1/2 cup Sugar
3/4 cup Mango puree
1 Teaspoon Lemon Zest
1 Teaspoon Vanilla extract or essence
1 cup of cubed Mango pieces

For baking caramel, we need 8-10 Aluminum muffin cups

For Caramel:

1/2 Cup Sugar
1 Tablespoon Butter
1/2 Lime juice (optional)

Making the Caramel:

Coat the baking dish with butter
Mix sugar and lemon juice
Put on medium-low flame and boil until the colour becomes a clear golden brown, occasionally swirl the saucepan over the heat.
When it has reached the golden colour, immediately pour this caramel into the baking cups, in which you will be baking the flan in.
Completely cover the bottom and a bit of the sides of this baking pan. Set aside.

Making the Flan:


In a blender, add eggs, milk, sugar, lemon zest, vanilla extract and mango puree and blend to a smooth mixture. Pass this mixture in a large bowl and whisk till it is properly mixed.
Pour this flan mixture into the baking cups.
Add fresh mango cubes into the cups.
Cover the cups with foil papers tightly
Place the baking cups into a double sided magic pan
Carefully add hot water to that pan, until water reaches about half-way up the sides of the flan baking cups, make sure no water will enter the baking cups.
Place the pan on a medium flame and cook for about 1/2 an hour.
After half an hour check the doneness by inserting a toothpick into the centre of the flan. If it doesn’t come out clean, cook for another 10 minutes.
When you are ready to serve it, make the dish set aside for a couple of minutes, this will melt the caramel.
Make sure you take the plate to turn it over that is bigger than the diameter of the flan. Also keep in mind that there will be a lot of caramel juice.
Then run a dinner knife all around the sides, to loosen it. Then place a large platter over it, and flip it over. Carefully lift the baking cup upwards.
Serve with Mango slices, cream and Mint leaves if you want.
